I have always loved the expression "tough cookie", but if I should describe myself in cookie terms I think I'd fall in the chewy category. Which is fine, because those are my favourite kind anyway.
A big, fat chewy cookie with that perfect balance of crispy edges and gooey chewy inside with slightly warm, melted chocolate chips. Oh man.
These are chocolate chip cookies all grown up. They are full of ground coffee, walnuts and dark chocolate and sprinkled with smoked salt. They are not gentlemanly cookies you bring home to your parents, but tall, dark and handsome ones that you keep all to yourself.
Tall dark and handsome chocolate chip cookies
6 100g/4oz. cookies
½ tsp. baking soda
½ tsp. corn starch
½ tsp. salt
1 Tbsp. very finely ground coffee
¼ tsp. vanilla powder
115g cold butter, finely diced
75g dark brown sugar
60g granulated sugar
1 cold eggs
100g bittersweet chocolate chips
75g coarsely chopped walnuts
Smoked sea salt flakes for sprinkling
In a medium bowl, mix together the flour, cornstarch baking soda, ground coffee, vanilla powder and salt. Set aside.
In a stand mixer fitted with a paddle attachment, beat the butter and sugar for 2-3 minutes, or until the sugar dissolves into the butter. Lower the speed to medium-low, mix in the eggs and beat until mixed. Gradually add in the flour mixture, beating until the flour is incorporated. Fold in the chocolate chips and walnuts with a rubber spatula.
Divide the dough into 12 even pieces. Shape the dough roughly into a ball, but do not roll it. Place the dough balls on a tray or plate and wrap with cling film. Chill for at least 1, but preferably 48 hours.
When ready to bake preheat oven to 190C/375F. Prepare a baking sheet with parchment, and place the cookies 5-6 cm apart.
Sprinkle with smoked sea salt and bake cookies for 12-15 minutes, until golden brown.
Err on the side of under baking and remove them sooner rather than later.
The cookies will continue to cook as they cool and the cookies lose a lot of their charm if over baked.
Cool slightly on a wire rack and enjoy!
